BEST and EASIEST BLUEBERRY MUFFINS

  • 2 cups sifted all-purpose flour
  • 4 teaspoons Baking Powder
  • 1 teaspoon salt
  • 1/2 cup sugar
  • 1 cup milk
  • 1 egg
  • 1/2 cup vegetable oil
  • 1 1/2 cups blueberries
  • 1 tbsp. flour

Measure out berries into a bowl, the 1 1/2 cups of the berries and gently toss with the 1 tbsp. of flour, In your main larger mixing bowl, combine only the dry ingredients, Sifted flour, baking powder, salt and sugar. In a small mixing bowl add milk, egg and oil, beat until blended.  now add the wet ingredients into the dry with a fork, do not completely mix, batter needs to be lumpy, gently add your flour coated berries with only a few folds into batter carefully not to over beat the batter. Grease bottoms of muffin tins (you may use paper muffin cups in the muffin tin) fill 2/3 full with mixture.

 Bake about 20-25 minutes in a pre-heated 400 degree oven.
