TOMATO PIE

  • 2 cups of any biscuit mix
  • 2/3 cup milk
  • 2 medium sized fresh Tomato's from the garden (peel off skin and slice)
  • 1tsp. chopped chives or scallions (optional)
  • 1tsp. Basil
  • 1 cup shredded sharp cheese
  • 1 cup mayonnaise
  • salt & pepper to taste

Gently mix biscuit and milk together, spread and cover bottom and sides of a greased 9" pie plate.  Place sliced tomato's in pie plate, sprinkle seasonings on top of tomato's.  Mix cheese and mayonnaise together and spread over top of tomato's. Bake in a preheated 400 degree oven for 35 minutes.
